Shabu shabu
(individual hot pot) may not be the most refined form of Chinese cuisine, and
therefore does not figure in most gourmet lists. But when the chill of winter
arrives, its vaporous emanations and pungent aromas are a sure way to whet the
appetite.
A hot steaming pot of
soup stock set in the front. A burner keeps the pot bubbling as diners dip in
raw vegetables and meat, until they are cooked to their taste. Beforethey are popped in the mouth, the pieces are dipped in an aromatic
